Come learn what to do with those beautiful eggplants!

Cooked Eggplant and then mashed up is a wonderful item to have in freezer and then it is ready to defrost.  This is one of those dishes you can whip up right out of the garden or just home from the Farmer’s Market.

We’ll be sharing a smokey, roasted eggplant tomato salad and an Italian style eggplant rollatini.
